With the coming new year comes new goals, aspirations and resolutions we aspire to achieve. However most times we fall short because many of these resolutions are not sustainable long term. Why not try committing to a 30-Day challenge. These small challenges allow you to open up your mind to new possibilities and ways of being.
Committing to something small for 30 days is a lot easier than trying to immediately commit to something new long-term 30 days can put you well on your way to making something an actual ingrained habit.
My plan in 2019 is to try to start by committing to a 30-Day Self Care Challenge. My focus for 30 days is centered around mind, body, and spirit.

A charcuterie board is a perfect dinner for someone who is following a low carb lifestyle like keto. It’s a platter of meats and cheeses that are paired together in flavorful combinations. Tonight I chose Margherita Genoa Salami, Smoked Gouda and Bacon Jalapeno and a Chipotle Jack cheese. On the side a mixed green chopped salad with skinless chicken thighs, sweet potato, and strawberries. I incorporated a glass of Zinfandel as a special treat for the hubby. Today, I was looking for something quick, easy, gluten-free and low-carb to eat. I stopped at a nearby produce market and walked up on some huge jalapeno peppers on sale for $0.88/pound and immediately thought of, “poppers.”
These little cheese filled peppers have become a staple in my household at family gatherings and Monday night TV and with only 5 ingredients it comes in at under $5.00 to prepare.
6 Large Jalapeno Peppers halved with seeds removed
8 oz Softened Cream Cheese
4 oz Shredded Cheddar Cheese
Garlic Powder (season to taste)
Onion Powder (season to taste)
6 Large Jalapeno Peppers halved with seeds removed.
Combine softened Cream Cheese, Shredded Cheddar, Green Onion, Garlic Powder and Onion Powder.
Spoon mixture into Jalapeno Pepper halves.
Preheat oven to 400 degrees and bake for 15 minutes. Let stand for 5 minutes before serving…Enjoy!
Since having Gastric Sleeve surgery performed as a revision to my Lap-Band surgery and adopting a low carb/ketogenic lifestyle I’ve become a “cheese snob.” I find myself visiting the specialty cheese section at the high-end markets to snag only the best offered. I stumbled upon a variety of grilling cheeses at Whole Foods and while 3 peaked my interest. My favorite hands down is Carr Valley’s Bread Cheese.
Bread Cheese also is known as Leipäjuusto or juustoleipä, which is also known in the United States as Finnish squeaky cheese, is a fresh cheese traditionally made from cow’s beestings, rich milk from a cow that has recently calved.
This cheese is rich and tasty it can be eaten as s substitute for grilled cheese, mozzarella sticks, or eaten with honey or jam as a sweet treat.
I opted to prepare my Bread Cheese by warming it in a pan with a side of salami and it served as dinner on a lazy Monday evening. You can also pop it in your oven or microwave until it glistens. Serve it with your favorite dip as a delicious snack. Good as is!
Stats are pretty amazing at 100 calories for a 1 oz serving with 6g of Protein. Check your local specialty grocer for this delightful cheese and thank me later.
The Chelsea boot remains the ankle boot of choice in my shoe game rotation. It’s easy to wear yet richly stylish. I picked these up in the patent leather style at my local MANDEE store. I opted to style with a crisp white jogger pant, faux leather jacket, tassel earrings and racer bodysuit.

Two plus years ago when I was tipping the scale at 215 pounds I cringed at the thought of wearing jeans. I found it extremely hard to find the appropriate fit. All denim seemed uncomfortable. After losing 93 pounds I got up enough nerve to actually purchase some jeans and I am, “ALL THE WAY IN LOVE!”
My Top Denim Trend this Fall is hands down the “Track-Stipe” denim it’s a “vibe.” This is a look that can be played up or down. I chose to style this look with oversized sunglasses, statement earrings, and fanny pack. If you are looking for nice boots to style up your skinny jeans I recommend these. The key to success in any weight loss journey is not depriving yourself a treat. I had a sweet tooth and cheesecake sounded good at the moment but when I looked up the calorie counts for a single slice of Cheesecake Factory Original Cheesecake I quickly resigned that thought. A single slice of cheesecake contains 707 calories, 29g of saturated fat, 425 mg of sodium and 62 g of carbohydrates.
I stumbled upon this Cheesecake Stuffed Strawberries that hit the spot.
- Beat cream cheese, stevia, and vanilla extract together in a bowl until smooth; spoon into a piping bag or a resealable bag with a corner snipped.
- Fill cavities of cored strawberries with the cream cheese mixture. Dip filled side of strawberries in the crushed unsalted nuts (optional).

THE STRUGGLE ENDS WHEN GRATITUDE BEGINS!!! Life is 10% what happens to you and 90% how you respond to it. Life happened about 7 years after lap-band surgery and I regained weight. While in my opinion, I looked OK I felt REALLY bad. My response was to have weight loss revision surgery specifically, Vertical Sleeve Gastrectomy Surgery performed on October 3, 2016. This surgery involves removing 80% of your stomach. That may not be your thing but it’s what helped me! Cheers to 2 years and 93 pounds down.
