The best Charcuterie Board & Salad Bowl EVER!

A charcuterie board is a perfect dinner for someone who is following a low carb lifestyle like keto.  It’s a platter of meats and cheeses that are paired together in flavorful combinations. Tonight I chose Margherita Genoa Salami, Smoked Gouda and Bacon Jalapeno and a Chipotle Jack cheese. On the side a mixed green chopped salad with skinless chicken thighs, sweet potato, and strawberries. I incorporated a glass of Zinfandel as a special treat for the hubby.  What’s on your at home charcuterie board?


My Favorite Grilling Cheese

Since having Gastric Sleeve surgery performed as a revision to my Lap-Band surgery and adopting a low carb/ketogenic lifestyle I’ve become a “cheese snob.” I find myself visiting the specialty cheese section at the high-end markets to snag only the best offered. I stumbled upon a variety of grilling cheeses at Whole Foods and while 3 peaked my interest. My favorite hands down is Carr Valley’s Bread Cheese.

Bread Cheese also is known as Leipäjuusto or juustoleipä, which is also known in the United States as Finnish squeaky cheese, is a fresh cheese traditionally made from cow’s beestings, rich milk from a cow that has recently calved.

This cheese is rich and tasty it can be eaten as s substitute for grilled cheese, mozzarella sticks, or eaten with honey or jam as a sweet treat.

I opted to prepare my Bread Cheese by warming it in a pan with a side of salami and it served as dinner on a lazy Monday evening. You can also pop it in your oven or microwave until it glistens. Serve it with your favorite dip as a delicious snack. Good as is!


Stats are pretty amazing at 100 calories for a 1 oz serving with 6g of Protein. Check your local specialty grocer for this delightful cheese and thank me later.
